There is a linux kiosk software called Webconverger (http://webconverger.org/). It is basically a live linux CD that will boot as a working kiosk, provided some tweeks are made. I think it's open source, and with some modifications (such as the ability to reset the browser every 15 minutes) it could be a great thing for you guys, if you have a linux guy (or girl) who can customize it.

An off the wall suggestion
Thank you for the heads up. We have already been looking Web Converger as well as some other Linux solutions. We actually were able to customize Web Converger and we developed a simple QT based browser that starts full screen and captures the keyboard in order to lock down the Linux X11 Desktop independent of the Linux flavor.
Unfortunately Linux has less then 1% of the market, so we are currently concentrating on Windows.
Linux is close to being a viable general use OS, but I believe it will be a couple more years before it becomes popular enough to start cutting into Windows.
